Editing PDF files in Adobe Acrobat X1 Standard

I have just purchased adobe acrobat 11 standard after using adobe acrobat 7 for quite a while and I am having trouble finding certain features that I have used a lot in the past.  Hopefully someone can give me guidance as to if the features i need were taken out since Adobe 7 or how I can find them in XI.

 

There is no tab available (“Document” tab) that gives you options to insert, extract, and other related type doc functions.  Also, there was a tab of options in the old adobe to insert (and move around) - arrows, lines, ovals, rectangles, etc and also a typewriter function that allowed for easy movement in the document.  In XI, there is an add text function but it is not very user friendly (hard to relocate typed data).  In the old adobe I had (7),  there was also an option to be able to rotate either an  individual page or entire document and then save those view selections if you wanted to.  Does this program not have these or am I just missing something.  It just seems like there isn’t much I am able to do like with the other adobe….  Forgive my ignorance on these matters as there is probably something simple I am just not seeing there.
