Garbled fonts when trying to optimize a PDF

I'm trying to optimize a PDF according to settings provided by another party. When we tried to optimize our original print-ready PDFs using Acrobat 10, it quit every time (same probably replicated on multiple machines in the same office). We were able to get them optimized in Acrobat 11 but several fonts including Chaparral Pro, Arial Narrow, Antique Olive, Adobe Caslon Pro and Myriad Pro are screwed up on the optimized PDF. In some case capitals have become lowercase letters, the kerning and tracking is wrong or letters are offset, or in at least one case, a random letter is missing all together. This is not the case for every use of these fonts, in some places it appears just fine.

 

The same original PDF was optimized without incident by someone in a completely different office (who does not have these fonts) without incident on Acrobat 10. We have tried to troubleshoot it by isolating different settings to no avail.
